CUPCAKES!!!

Included are the recipes for the delicious cupcakes that we were lucky enough to have at our last RS Meeting.  I hope you all enjoy.  I know I'm going to be making the Strawberry Lemonade ones soon!

Strawberry Lemonade Cupcakes

Ingredients:

Cupcake Ingredients:

• 1 (18.25 oz.) strawberry cake mix
• 3/4 cup buttermilk
• 1/2 cup vegetable or canola oil
• 1/4 cup (4 Tbsp.) lemon juice
• 4 eggs

Frosting Ingredients:

• 1/2 cup (1 stick) butter, softened
• 1/4 cup pureed strawberries (made from fresh or frozen strawberries)
• 1 tsp. lemon juice
• 1 tsp. vanilla
• 3 – 4 cups powdered sugar (adjust to achieve desired consistency)

To Make Cupcakes:

Preheat the oven to 350 degrees. Line 24 muffin cups with paper liners.

Add the cake mix, buttermilk, oil and lemon juice to a large mixing bowl. Beat with an electric mixer on low to medium speed until moistened, about 30 seconds.  Add eggs one at a time, until the batter is well-mixed. Increase speed to high and beat until thick and fluffy, 2 minutes longer.

Pour or scoop the batter into the paper liners until they are 2/3 full. Bake for 15-20 minutes, or until a toothpick inserted in the middle comes out clean. Remove from oven and let cupcakes cool on a wire rack.

To Make Frosting:

Cream butter in an electric mixer on medium-speed until smooth and fluffy, about 2-3 minutes.  Then add in the strawberries, vanilla and lemon juice, and mix on low-speed until combined.  Gradually add in the  powdered sugar and mix until combined.  Then beat on medium speed until light and fluffy, another 3-5 minutes.  (Add in more powdered sugar if consistency is too thin.)

Mayan Chocolate Cupcakes with Cocoa-Cinnamon Buttercream Recipe

Ingredients:

Cupcake Ingredients:

• 1 (18.25 oz.) box Devil’s Food (or other chocolate variety) cake mix
• 1 cup buttermilk
• 1/2 cup vegetable or canola oil
• 1 tsp. cinnamon
• 1/2 tsp. chili powder
• 1/4 tsp. cayenne
• 4 eggs

Frosting Ingredients:

• 1 stick (1/2 cup) butter, room temperature
• 1/2 cup unsweetened cocoa powder
• 1/4 cup milk
• 1 tsp. cinnamon
• 2 1/2 cups powdered sugar (more or less to achieve desired consistency)

To Make Cupcakes:

Preheat the oven to 350 degrees. Line 24 muffin cups with paper liners.

Add the first six cake ingredients (cake mix through cayenne) together in a large mixing bowl. Beat with an electric mixer on low to medium speed until moistened, about 30 seconds.  Add eggs one at a time, until the batter is well-mixed. Vanilla Almond Cupcakes w/ Salted Caramel Buttercream Recipe

Ingredients:

• 1 (18.25 oz.) white cake mix
• 1 cup buttermilk
• 1/2 cup vegetable or canola oil
• 1 tsp. almond extract
• 1 tsp. vanilla
• 4 eggs

Frosting Ingredients:

• 1/4 cup sugar
• 2 Tbsp. water
• 1/4 cup heavy cream
• 1 tsp. vanilla
• 3/4 cup (1.5 sticks) salted butter, softened, or can use unsalted butter and just add 1/4 tsp salt for each stick used
• 2 cups powdered sugar

Method:

To Make Cupcakes:

Preheat the oven to 350 degrees. Line 24 muffin cups with paper liners.

Add the cake mix, buttermilk, oil, almond extract and vanilla to a large mixing bowl. Beat with an electric mixer on low to medium speed until moistened, about 30 seconds.  Add eggs one at a time, until the batter is well-mixed. To Make Frosting:

Briefly stir together granulated sugar and water in a small saucepan and bring to a boil over medium-high heat. Continue cooking, WITHOUT STIRRING, until mixture turns dark amber in color, about 6 to 7 minutes.

Remove from heat and slowly add in cream and vanilla (just start with a tablespoon or two), stirring with a wooden spoon until completely smooth. (Be careful, as the mixture will definitely bubble up and possibly splatter a bit as you add in the cream.)  Set aside until cool to the touch, about 25 minutes.

Beat the butter in the bowl of a stand mixer fitted with the paddle attachment on medium-high speed until light in color and fluffy, about 3 minutes. Reduce speed to low, add powdered sugar, and mix until completely incorporated.  Turn off the mixer, and then add caramel. Beat frosting on low to combine, and then increase to medium-high and beat until airy and thoroughly mixed, about 2 minutes. Refrigerate if not using immediately (or to harden the frosting a bit).

If you want to decorate with the swirls, double your frosting recipe.  If not, a single batch should be plenty!

Terry Bartchak

Terry and her husband Jeff moved the area in 1994, when their oldest daughter Kaitlyn was two. Later, Zoey (9) joined their family. Prior to NWA, Terry and Jeff lived in Idaho and Pennsylvania. Her interests include work and home schooling. Her family makes her happy. She doesn’t have a preference between dark and milk chocolate. She will gladly eat either one since chocolate is her favorite food. Her favorite scripture is John 3:16 (For God so loved the world that he sent his only begotten Son, that whosoever believeth in him should not perish, but have everlasting life.) because Jesus Christ is our hope. Two things she wants to accomplish this year is to become more service oriented and search for truth. Welcome to the branch, Terry.

Sister Spotlight

Cori Graham
Cori moved to NWA in December 2000 from Orem, Utah. Cori and her husband Dave have 4 children: Hannah (11), Wes (9), Alyssa (7), and Megan (5). Cori’s interests include: music, reading, camping, crocheting, tennis, and childbirth. She feels happy when she is surrounded by good friends, playing games, or eating Mexican. She prefers dark chocolate. Her favorite food is Mexican (anytime and anyplace). Her favorite dessert is a trifle. And her favorite place to vacation is in Europe. Her favorite scripture is Mosiah 2:20-22 (if you should render all the thanks and praise…to that God..if ye should serve Him with all your whole souls yet ye would be unprofitable servants) because it reminds her that we are always in His debt. Her goal for 2011 is to finish her doula certification.

Family Enrichment Group

We are excited to introduce a new group that will be available for participation, The Family Enrichment Group!  The purpose of the group will be to provide an avenue for us to assist and support one another in the craziness of raising children and strengthening our families.  The group will meet on a regular basis, in the later evening, around 8:30, with the hope that all the kiddos are tucked in bed and we can have great adult conversation.  The location and the topic of conversation will vary.  Sometimes there will be a book or article to read before hand for discussion, other times we may have a guest speaker.  Topics will range from dealing with tantrums to inviting the Spirit into our home to potty training to helping our children manage friend problems to having those hard talks with our children and many others in between.  It is our hope that as we come together we will be able to realize we aren't alone in our struggles as well as strengthen our resolve (as our dear President Hinckley said) "to try a little harder to be a little better."

Our first meeting will be in just a few weeks, and we are really looking forward to it.   We'll have an introduction to our group and discussing the book "Raising Up a Family to the Lord"  by Gene R. Cook.  As well as discuss future group topics.  (Please know that reading the book isn't a requirement for attendance.)

Quilting Class

The sisters in the Branch are welcome to come to this if they want to. It will be from 9-11 at the church.

 I am very excited about doing the quilting class! I have been looking at possibilities and have come up with a few ideas and will be getting some from Leslee, as well. I will try to choose blocks where we can all learn new techniques and then at the end of the year we will put them all together and put a border around them, so we can learn to do borders, as well. Then you will have a sampler quilt top to display or give as a gift, etc. If you need help in between our classes don't hesitate to call me and set up a time and I will be glad to help.

 

This is the quilt block we will be doing on March 10^th (see pictures below). I just wanted to give you a heads up so you could be selecting the colors/fabrics you want to use. I am going to use more bright colors, but you can use whatever you have or think will look good.

 

This makes a 12" block!

 

Color 1 (Anything dark—can be a floral, pattern, etc)

Color 1 needs: one 3-1/2" x 14" strip

Color 2 (Anything light—something to match the dark one above)

Color 2 needs: one 3- 1/2" x 14" strip

Color 3 (Just a light, plain color)

Color 3 needs: one 6-1/2" x 13" strip

Color 4 (Any medium textured colored—like a marble , or swirls, etc. to match the others)

Informational Items

Summer, 2011

The Rogers Stake will continue the "corn" farm project this summer located at the Centerton Ward site, corner of Seba and Gamble Roads.  This year we plan to plant a little more than five acres of sweet corn for member use.  Individual garden plots will also be available.

The stake will continue to provide water, and faucets are located at central sites; families need to furnish personal water hoses to get the water to their plots.  An electric fence has been installed to keep deer and raccoons away from the plants and gates are provided to allow access into the individual plots.

 All who are interested are encouraged to become involved.  You may have as many plots as you need--each family is responsible for watering, weeding and maintenance of their own plot.  The ground will be plowed, harrowed, and disked.  We are setting a goal to be ready for planting by April 1—weather permitting, but water will not be available until April 15 due to potential late freezing.  If you have questions, know of someone who wants a plot or want a plot reserved for your family, please contact Brother Tim Isabell, 644-8281, no later than April 1 so arrangements can be finalized.
